Parmesan Parmigiana
I bought an eggplant. I don't believe I've ever tasted one in my entire life, but I bought one! Thirty seconds later the question of 'what to do with it' arose. After searching for a recipe on line and in recipe books, Laurel finally made my mind up for me- Eggplant Parmigiana! She's had it twice now so it must be good, right? Well I'mma gonna make it this weekend so I'll let you know!

Yummy Michelle. Grandma used to make Egg Plant. She just battered it and then fried it. That's the only way I have ever eaten it. This recipe looks good. Good luck making it. I know it will turn out great because you are a really good cook!
